Well, cryptography is a somewhat necessary start for cryptanalysis,
and Schneier's excellent long bibliography has pointers to many
papers that are probably useful for learning cryptanalysis,
and some of the other books go into more of the math used for
cryptography, which points you to the math you need for analysis.

Some of the linear and differential cryptography papers
in Schneier's bibliography are probably good reads,
though I can't comment from personal experience :-)
